Farm update: July 12

How are you? How is your July thus far? It’s high summer here at Quiet Farm and we spend more time outdoors than in – always, always wearing long sleeves, long pants, wide-brimmed hats and plenty of SPF 50 (only reef-safe zinc, though we’re nowhere near a reef!) on any exposed skin. Skin cancer is not to be taken lightly, especially since we’re more than a mile closer to the sun. Here are a few things we’ve been up to, if you’d like to see:

Each growing season, I aim to plant at least one new fruit, vegetable, herb or flower. Last year it was fennel (and unintentionally this year, too, since it self-seeded) but this year’s choice was sunchokes (Helianthus tuberosus). Sunchokes (also called Jerusalem artichokes, though they’re native to North America, not Israel) are in the sunflower family (Asteraceae), and the plants produce showy yellow flowers and an edible tuber. They’re not well known in the U.S.; even in France they’re grown primarily for animal feed. But! The crisp, white-fleshed tubers are rich in inulin (a dietary fiber) and are absolutely delicious when roasted and salted like potatoes. I might even try some sunchoke chips in the dehydrator! I’m excited to harvest these later this season, especially because once established, they’ll likely need no water and no maintenance, and will hopefully continue to produce a nutritious winter storage crop all on their own.

Anyone who has read this blog for more than one minute knows that I am constantly trying to convince the entire world to bake their own bread. Really, you should! So easy! So satisfying! So much healthier and tastier than store-bought! But perhaps you find large burnished sourdough loaves to be somewhat intimidating? No problem. Start simple, like hamburger buns. I know that I’ve just missed the Fourth of July, a classic burger holiday if ever there was one. But if you start practicing now, you’ll have mastered homemade burger buns by Labor Day! (Only joking, because you don’t need any practice at all; buns are really easy.) Use this reliable recipe – I did not make any alterations for altitude – and bake a batch to tuck in your freezer for future grilling opportunities. The recipe yields eight large; I make sixteen if I want to serve sliders. Please, try this and let me know if you have troubles – I’ll help you sort them out!

Our migratory hummingbird population is thriving; if we remain still, we’re able to see them up close on our feeders. We observe two species most commonly here – the broad-tailed (Selasphorus platycercus) and the black-chinned (Archilochus alexandri), and only very rarely a rufous (Selasphorus rufus). The hummingbirds are so much fun to listen to as they dive and swoop like miniature fighter jets. We’ve even discovered a tiny nest precariously perched on the twinkle light strands on our front porch; we’ve left it alone for the moment in the hopes that there might be viable eggs in it. Although we have dozens of incredible bird species here at Quiet Farm, the fast and spirited hummingbirds are definitely one of our favorites.

Fresh, crisp, satisfying and most of all – cold.

Despite the slider rolls above, supper is entirely abandoned more evenings than not here at Quiet Farm. When it’s pushing 100 degrees at 5:30PM and we’ve been out irrigating all day, the very last thing I want to do is turn on the oven or the stove. Enter the cold noodle salad, remarkably simple and infinitely variable. I cook the noodles in well-salted water first thing in the morning, when it’s (relatively) cool. Drain and toss the still-warm noodles in sesame oil, soy sauce, rice vinegar, and chile sauce if you like things spicy. Shred a whole mess of vegetables, whatever you have on hand – carrots, cabbage, snap peas, broccoli, bell peppers, cauliflower – and toss with a bit more soy and vinegar. Chill everything. When it’s time to eat, make yourself a beautiful, colorful plate and garnish with lots and lots of fresh herbs – I like a mixture of Thai basil, cilantro, scallions and mint. Add more soy or sesame oil as desired. Chopped salted peanuts are great, too! You could serve this on a bed of fresh greens, you could top this with crispy tofu or strips of a simple scallion omelette, or you could just eat it as is. One of my very favorite low-effort/high-flavor summer meals. (P.S. When you’re making something that will later be eaten cold, remember to have a generous hand with the seasoning. Cold dulls flavor, therefore it doesn’t taste as intense. Be lavish with salt and herbs!)

And finally, our animals are thrilled with their new haircuts. Although they have access to shade, they still spend their time happily grazing away in the pasture. Even on the hottest days, when we’re melting and seeking out any cool spot we can find, they’re happy to be out in the sun. Last summer was a different story, and we’re so pleased that we were able to get them sheared so they can be more comfortable during this brutal season.

Farm update: August 31

How are you doing out there, friends? Here at Quiet Farm we’re immensely grateful for clearer skies and cooler temperatures. We’re about seventy miles from the largest wildfire in Colorado’s history, and there were days over the past couple of weeks where it felt as though we lived inside of a barbecue grill. Although the air still smells of smoke, and we don’t have our crystalline blue skies back, conditions have definitely improved. We send our heartfelt thanks to all of the fire fighters, police officers, and other emergency services personnel who put their lives on the line every single day. Thank you.

We went peach picking this past week; these are likely the last of this year’s harvest and ninety pounds are now nestled in boxes in our garage fridge awaiting processing. Colorado is most famous for its Palisade peaches, north of us in Mesa County; unfortunately – as though 2020 weren’t awful enough! – Palisade lost about eighty percent of its peach crop this year to that killing frost we had back in April. Our peach trees here in Delta County didn’t suffer nearly as badly (we did lose all of our cherries), so we’ll have local canned peaches in January that taste like liquid sunshine. (Fun fact: if you’re buying Palisade peaches on the Front Range, you should ask what orchard the fruit actually came from. Most of the peaches sold as “Palisade” this year didn’t come from Colorado, but from California. Also, in a season like this one, many of our Delta County peaches get rebranded as Palisade. Brand names sell, plain and simple.)

N captured this early morning shot of our resident young fox hunting voles in our pasture. The magpies, never shy about their desire for a free meal, wait patiently in the hope that they too might share in the spoils. It’s tough to balance our ecosystem’s need for apex predators – we definitely want the fox to help control our rodent population, but we’d also like it to stay far away from our chickens. This debate is currently playing out on a much larger scale, as the Colorado ballot this November will ask whether voters want to reintroduce gray wolves, eradicated around 1940, in our part of the state. (Also please observe how beautiful that pasture looks. All credit to N for his mowing and irrigation work this season!)

We grew wheat! We opted to participate in small-scale wheat trials this year, and while much of our trial crop was demolished by deer, rabbits and squirrels, and plenty more taken out by strong winds, we did harvest a few stalks. The wheat still needs to be separated from the chaff and field notes beg to be written, plus seed must be returned to the seed bank organizing the project. If we actually grew enough to bake a single loaf of bread, I’ll be amazed – but it’s really exciting to grow grains. In decades past, most regions in the U.S. had their own uniquely adapted grain varieties, and of course this also supported the mills and bakeries required to process those grains. Those disappeared in the centralization of agriculture, but local heritage grains are staging a resurgence across the country. We want to be part of that trend, even on a minuscule scale.

We also grew melons! This is amusing because we didn’t plant any melons. We do, however, have a thriving compost pile, and members of the vast curcubit family (squash, cucumbers and melons) are notorious both for cross-pollinating and for volunteering in unexpected places. This miniature cantaloupe (each is about the size of a softball) appeared in the hot pepper bed, where the serranos and cayennes are flourishing. We have five or six mature fruits now, and are excited to harvest one to see what we grew. If it’s delicious, we’ll save the seeds in the hopes we can grow it again, and we’ll have a melon bred just for Quiet Farm!

And finally, our tomatoes are coming on strong. The intense heat wave we’ve just endured definitely hastened the tomato ripening schedule, though we’ve obviously needed to irrigate much more frequently. This time of year we’re likely to have a tomato salad at every meal, if only because the season is so fleeting. No recipe needed: sun-warmed tomatoes, halved or quartered, good olive oil, thinly-sliced red onion, a few grinds of black pepper, basil and a generous sprinkling of crunchy salt. Fresh mozzarella, ricotta or cotija would obviously not go amiss here. Honestly, it’s summer in a bowl and we’ll make the most of it while it lasts.

With that, we’re off to tackle a busy week that will hopefully include a hay delivery, a pre-winter fireplace inspection and more than a few canning projects. Wishing you all safety and health.

Friends, it’s truly a surprise anything is blooming right now, considering our punishing temperatures – high nineties every day! – and total lack of moisture. Also, please send tax-deductible donations to help pay our extortionate water bill. But! We do have a few bright spots of color around the farm that we thought we’d share.

We planted a number of different flowers, including calendula and marigolds, in our raised beds to both provide visual interest and to attract beneficial pollinators. Although calendula doesn’t love our intense summer weather, most seem to be doing reasonably well and will hopefully bloom again in fall’s cooler temperatures.

This week in flowers: June 1

We’re working hard at creating space for a diverse array of organisms at Quiet Farm. We want plants blooming and flowering and setting seed, plants in every stage of life, throughout the season. We want our plants and trees to provide food and pollen and a home for all manner of things. We want to be a welcoming haven for songbirds and bees and insects and hummingbirds and toads and raptors and every other winged and crawling creature. We want not monoculture but polyculture, a place that mimics a natural ecosystem as closely as possible. We want life, and lots of it, everywhere we look and listen.

If we spent all our time spraying poisons and pulling “weeds,” or removing plants that didn’t fit a perfect garden aesthetic, we’d have none of this. No birdsong, no beneficial insects, no pollinators. Instead, we have a farm that bursts with color and vibrancy and life.

The world is furious and raging right now. In response: plant something colorful. Grow something delicious. Create something beautiful. Cook something nourishing. Wishing you and yours a calm, peaceful and healthy week.

Cooking from the garden

Friends, hello. It is early September and thus the height of the harvest season in our corner of the world. And though the tomatoes are finally, finally coming on after an unseasonably cool August, I find that I’m struggling to work up the enthusiasm I typically have during this time of abundance.

Right now seems to be a time of sadness for just about everyone. Not only are people suffering in our country and of course across the world, but closer to home friends and family are coping with grief, misfortune, illness, despair and all sorts of darkness. I struggle mightily (and often unsuccessfully) not to carry the weight of the world, so at times like these I always find myself back in the kitchen. We soldier on, doing our best; no matter what, we all need to eat.

One of my biggest challenges in my cooking classes is providing clear, usable recipes, because more often than not, I don’t cook from them. I know well that everyone wants recipes – especially if you’re just starting out in the kitchen, recipes offer valuable handholding and a sense of regimented calm and comfort, a plan to follow. What I ultimately try to teach, however, is the confidence to cook without recipes – to improvise, to adjust, to have faith in the process and your own palate and that the end result might not be exactly what you planned but will still, most likely, be delicious. And summer and early fall are certainly one of the easiest times to cook without recipes, since you can let the produce guide you.

As for improvisational cooking from the garden: let’s talk shishitos, just for a moment. These small peppers burst onto the culinary scene some years back as an appetizer in Japanese restaurants. The tip of the pepper is thought to resemble the head of a lion, shishi in Japanese; as such, their full name is shishitogarashi but is typically shortened to shishito. They’ll eventually turn red, like most peppers if left to ripen long enough, but they’re usually harvested green, about the size of a pinky finger. No recipe needed for these: crank up the heat on a cast-iron pan, drizzle with a tiny bit of neutral oil, like canola, and toss the peppers in just until they char and soften. Serve with soy sauce and flaky salt. I leave mine pretty crunchy, but you can cook them until they collapse, too, if that’s your preference.

Cucumbers are another summer favorite; like tomatoes, the difference between harvesting your own and buying sad, bitter supermarket versions is night and day. These little ones are theoretically designed for pickling, but to be honest I end up eating most of them raw. Thinly sliced or cut into chunks, with slivers of red onion; they’re dressed lightly with rice vinegar, olive oil, salt and pepper. Plus, any variety of bright, fresh herbs that I might feel compelled to use. Simple, fresh, crunchy, tangy and satisfying.

Unlike some, I am never tired of zucchini. Growing vegetables in our high-plains desert can be so challenging that I’m gratified by anything that produces so much for so little effort. Plus, zucchini is infinitely versatile, and it never goes to waste in my kitchen. Looking for an interesting spread for toast? Try this recipe from a talented Oregon farmer and home cook.

This summer, most of my zucchini starred in this Ottolenghi classic: lightly grilled with olive oil, then layered with fresh basil, toasted hazelnuts and slivers of Parmigiano, drizzled with hazelnut oil and white balsamic. I pretty much just gave you the recipe, but if you want more specific guidance, go here.

And these beauties? Nothing more than sliced, on a plate, with a drizzle of good olive oil and a sprinkling of salt. That’s it. Growing tomatoes in Colorado – and actually having them survive until harvest – is such a labor of love that it’s a crime to do anything more.

The Farm Series: Chatfield Farms

A couple of weeks ago, N and I spent some time at Denver Botanic Gardens’ Chatfield Farms, so we decided to make this the second post in our Farm Series. We’ve mentioned before that since we plan to buy a farm, we visit farms whenever possible. And we’re not fussy – we’ll visit any kind of farm, whether or not it’s similar to our vision for Quiet Farm, because we believe we can learn something from every single one.

Chatfield Farms occupies 700 acres along the banks of Deer Creek. It’s a historical site, a native plant restoration area, and a working farm with a 270-family CSA program, plus it includes nature trails and spectacular birdwatching. I’ve been part of the Veterans-to-Farmers program here and taught cooking classes at DBG for years now, and N photographed a friend’s wedding at Chatfield a couple of years ago, but we hadn’t yet had the chance to spend an evening at Chatfield Farms. And what an evening it was.

We were at the farm to participate in DBG’s annual Colorado Foodways event, which showcases both local food and local farmers. We showed up early with a car loaded down with grilled sweet corn and chiles from Palizzi Farm in Brighton, plus applewood-smoked goat cheese from Haystack Mountain, and we set about making samples for 150 guests.

But see that dramatic Colorado sky? Oh yes, there was rain. And wind. And more rain, and more wind. And a tent that flipped itself over and very nearly took down all of my carefully prepared food with it. But we persevered, and we ended up having a wonderfully perfect summer night in Colorado. And in times like these, it’s always essential to remember that we may believe we’re fully in control, but nature often has other ideas entirely.

Colorado Charred Sweet Corn and Green Chile Salad

 

Ingredients

  • 8 ears fresh Palizzi Farm corn
  • Olive oil, as needed
  • 4 large Palizzi Farm green chiles
  • 1 large red bell pepper
  • 1 pint cherry tomatoes
  • 1 bunch cilantro, trimmed and chopped
  • 1 bunch scallions, trimmed and chopped
  • 1 jalapeno or other hot pepper, minced (optional)
  • Juice and zest from 3-4 limes
  • 1-2 tbsp. white wine vinegar
  • 1 tsp. chile powder
  • Kosher salt and freshly ground pepper, to taste
  • 4 oz. fresh Haystack Mountain goat cheese, crumbled
  

Directions

Preheat a grill or broiler to medium-high heat. Remove the corn husks and rub the ears gently with a paper towel to remove the silks.

Rub six ears of corn lightly with olive oil and place on grill. Cook, turning as needed, until corn kernels are lightly charred. Remove corn from grill and set aside to cool. When corn is cool enough to handle, place one end upright on a cutting board and use a sharp knife to remove kernels. Cut kernels off two remaining raw ears of corn and combine with grilled corn.

Roast the chiles and bell pepper until skins are blackened; place in a glass bowl or container and cover tightly to allow steam to loosen skins. When cool enough to handle, remove skins, stems and seeds; roughly chop chiles and pepper.

Halve the tomatoes, and combine in a large bowl with cilantro and scallions. Add chiles, peppers, raw and grilled corn and hot pepper, if using.

In a small jar, shake together juice, zest, vinegar, chile powder and a pinch of salt and pepper. Pour dressing over salad, and taste for seasoning, adjusting as necessary with additional lime juice, vinegar, salt and pepper. Serve at room temperature, garnished with crumbled goat cheese.
